This year was our first year trying to grow vegetables in our backyard. While we did not have a big harvest, we were lucky enough to harvest some French Beans before the season ended. Here’s a simple recipe I learned from my mother-in-law & also happens to be my husband’s favourite dish while he grew up.
Ingredients
- 300 gms beans cut into small pieces
- 1 medium onion
- 1/2 tsp mustard seeds
- 1/2 inch ginger finely chopped
- 8-10 curry leaves finely chopped
- Fresh grated coconut (optional)
Instructions
- Heat 2 tbsp coconut oil &add mustard. When it starts to splutter add ginger, curry leaves & fry for 30 secs.
- Add chopped onion & sauté till almost brown then add cut beans, salt mix nicely & fry for 1 min on low heat
- Then cover & cook on low heat till it is almost cooked & crunchy (Do not overcook).
- Check salt. If adding coconut, add & cook for an extra minute & remove from heat
