Go fish! Tuna croquettes with canned @clover_leaf_seafoods tuna are the favourite kind of croquettes in our house.
Ingredients
- 3 cans tuna (170 grams each) - well drained
- 1 large onion chopped
- 5 garlic cloves
- 3-4 green chilies
- 1 inch ginger
- 1 cup chopped spinach
- 1/2 cup grated carrot
- 1 -2 tsp crushed black pepper powder
- 1/2 tsp turmeric powder
- 5 tbsp lemon juice
- Salt (as required)
- 2 medium potatoes - boiled, peeled and grated
- 2 tbsp coriander leaves - chopped
- 1 egg beaten
- Panko or breadcrumbs
Instructions
- Heat 4 tbsp oil, add crushed garlic, ginger and green chillies fry for 1/2 a minute.
- Add chopped onions and fry for 1 minute then add grated carrot and fry for 1 minute.
- Add chopped spinach and fry for 1 minute then add tuna and mix nicely.
- Add turmeric, crushed pepper, salt and cook stirring until the mixture is dry.
- Last add lemon juice then check salt and sourness and add accordingly.
- Remove from heat, cool then add boiled grated potatoes and mix well.
- Add the chopped coriander, mix well.
- Shape into croquettes.
- Dip in beaten eggs and then into Panko or breadcrumbs and shallow fry all croquettes.
