Alsande Sukke (Long Beans Stir Fry)

Serves: 4 Prep Time: 15 Minutes Cooking Time: 15 Minutes 15 Minutes

Ingredients

  • Alsande (long beans) - 200 gms cut into 1 inch pieces
  • 1 small Onion
  • 1 small Tomato
  • 1 Green chilly slit
  • 1/4 cup Grated coconut
For Tempering
  • 2 Garlic cloves crushed
  • 1/2 tsp Mustard seeds
  • 1/4 tsp Cumin seeds
  •  8-10 Curry leaves

Instructions

  1. Heat 1-2 tbsp coconut oil/regular oil, add onions & fry for a minute
  2. Add green chilly & fry for few seconds, add tomato & fry for a minute, then add cut beans & fry for a minute on low flame
  3. Add 1/2 cup water & salt. Once it starts to boil, lower flame then cover & cook till almost done. Do not overcook beans
  4. Add coconut & cook for 1-2 mins. Remove from heat and temper
  5. To temper: Heat 1 tbsp coconut oil/ regular oil add mustard seeds, when they splutter add cumin seeds, curry leaves & crushed garlic. When garlic is fried and light brown, add to the vegetable.
