Continuing our recipe journey in preparation for Monti Fest and Novem Jevan on September 8.
Ingredients
- Alsande (long beans) - 200 gms cut into 1 inch pieces
- 1 small Onion
- 1 small Tomato
- 1 Green chilly slit
- 1/4 cup Grated coconut
For Tempering
- 2 Garlic cloves crushed
- 1/2 tsp Mustard seeds
- 1/4 tsp Cumin seeds
- 8-10 Curry leaves
Instructions
- Heat 1-2 tbsp coconut oil/regular oil, add onions & fry for a minute
- Add green chilly & fry for few seconds, add tomato & fry for a minute, then add cut beans & fry for a minute on low flame
- Add 1/2 cup water & salt. Once it starts to boil, lower flame then cover & cook till almost done. Do not overcook beans
- Add coconut & cook for 1-2 mins. Remove from heat and temper
- To temper: Heat 1 tbsp coconut oil/ regular oil add mustard seeds, when they splutter add cumin seeds, curry leaves & crushed garlic. When garlic is fried and light brown, add to the vegetable.
