This quick and simple Batata Bhaji (Potato Vegetable Dish) was prepared by my husband. It can be paired well with puris, chapatis or crispy dosas. This recipe can be used for the ‘bhaji’ in Puri Bhaji and the ‘masala’ in Masala Dosa.
Ingredients
- 3lbs potatoes
- 1lbs onions
- 3 Green chillies
- 1/2 cup frozen green peas (optional)
- 1 sprig curry leaves
- 1 tbsp urad dal (split black gram)
- 50 grams Coriander chopped
- 1/2 tsp Asafoetida
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin (jeera) seeds
- 1/2 tsp Mustard seeds
- 1/4 tsp Sugar
- Salt to taste
- 1/4 tsp MSG (optional)
Instructions
- Peel & wash potatoes thencook in the microwave for 7 mins. Then remove & cool.
- In the meantime, cut the onions into 1/2 inch cubes & separate the layers. Slit 3 Chillies & finely chop the coriander leaves.
- Once the potatoes have cooled, cut them into cubes.
- In a deep saucepan, on high heat add vegetable oil.
- Add mustard, jeera to sputter. Then add urad dal & lower the heat.
- Add Asafoetida, curry leaves, chillies
- Add 1/4 tsp of turmeric & stir fry for 10 seconds. Do not let the turmeric burn.
- Add Potatoes & fry for 1 min on medium heat. Then add 1 cup of water & cook for 5 mins stirring every minute to avoid potatoes from sticking to the base.
- Once the potatoes are soft, add the onions & salt.
- Cover & cook for 3 minutes - add water if needed.
- With a masher, only partially mash the potatoes in the pan on medium to slow flame. We want a mixture of potato textures (mashed & semi-solid)
- If adding frozen green peas, rinse and add to mixture. Cook for 1 min.
- Lastly, add sugar & check the salt. Optionally add MSG.
- Mix well and remove from heat. Keep covered.
- Garnish with coriander leaves.
- Serve with chapatis, puris, pita bread (khuboos) or crispy dosas.
