Whenever we have lots of leftover white rice, this is a quick recipe I use. Lemon Rice serves well with pickle and papaddums/papads.
Ingredients
- 4 cups leftover white rice
- 1 tsp Mustard
- 1 tbsp Urad dal (split black gram)
- 2 tbsp chana dal (split bengal gram)
- 10-15 fresh curry leaves
- 1 inch ginger chopped fine
- 1 green chilly chopped fine
- 5 dried Kashmiri chillies broken into half
- 1/2 tsp turmeric powder
- 6-7 tbsp lemon juice
Instructions
- In a pan, heat 3-4 tbsp oil
- Add mustard and when it starts to splutter add Chana Dal fry for few seconds, then add Urad dal, dry chillies, curry leaves, ginger and green chillies fry for 1/2 second.
- Add rice and mix
- Add turmeric, salt as per taste and mix nicely
- Add lemon juice, check salt and sourness, and remove from heat
- Serve with papad and pickle
