Some matches are made in food heaven. Earlier this week we shared our recipe for batata (potato) bhaji. Now here’s the recipe for it’s perfect companion – Puri.
Ingredients
- 2 cups Wheat flour
- 1.5 tbsp Rava
- 1 tbsp Maida
- 1 tbsp hot oil
- 1/2 tsp salt
- 1 tsp sugar
- Water for kneading
- Oil for deep frying
Instructions
- In the stand mixer bowl*, add Rava, wheat flour, maida, salt, sugar, oil, mix nicely with a fork. Then attach the dough hook attachment & knead on low speed (#2) adding water gradually until you get the tight/stiff dough (tighter than chapati dough). Then increase the speed to #4 and knead for 2 mins. (*If you don’t have a stand mixer, you can also mix it by hand in a bowl)
- Once done, cover the dough with moist cloth & let it rest for 15-20 mins.
- Then again knead the dough by hand for 1 minute & cut into lemon sized balls. Roll the dough by applying oil to a semi thick round disc (not very thick or thin).
- Heat oil in a kadai/pot for deep frying the puris. To check if the oil is hot drop a small piece of dough in hot oil if it rises up immediately & not brown then it is ready to fry
- Slide the puris into the oil then press it with slotted spoon until puris puff up. Turn & fry for seconds or until the bubbles stop, remove on to a paper towel. Fry the remaining puris.
- Enjoy with batata (potato) bhaji, shrikhand, chole or aamras
