Quick Sambar recipe using store bought Sambar powder. If we have leftovers we pair it with Medu Vada or Crispy Dosa the next day.

Serves: 8-10 Prep Time: 20 Minutes Cooking Time: 30 Minutes 30 Minutes

Ingredients

  • 1 cup Toor dal
  • 2 large drumsticks cut into 2 inch pieces
  • 1/2 cup Pumpkin cut into 1 inch pieces
  • 5 okra cut diagonally into half
  • 1 large onion cut into 4 quarters/ small Sambar onions 8-10
  • 8-10 curry leaves
  • Pinch of asafoetida
  • Small lemon sized tamarind soaked in 1/2 cup water
  • 1 large tomato
  • 4-5 tbsp Sambar powder (store bought)
  • 1/2 tsp turmeric
  • 1 tsp jaggery/sugar (optional)
  • 2 tbsp chopped coriander for garnish
Tempering
  • Mustard 1 tsp
  • Asafoetida 1/4 tsp
  • 5-6 Crushed garlic
  • 8-10 curry leaves
  • Dry red Sambar chillies or any other dry red chillies broken into half

Instructions

  1. Pressure cook dal in 3 cups water for 3-4 whistles
  2. In a pan, add drumsticks, 3 cups water.
  3. Once water starts to boil, add onion, curry leaves, asafoetida, turmeric & boil covered for 1-2 minutes.
  4. Add pumpkin & boil covered for 1-2 minutes
  5. Add pressure cooked dal, add 2-3 cups water & boil for 1 minute.
  6. In a bowl mix Sambar powder with little water to make a thick paste
  7. Add Sambar powder paste, Tamarind pulp & cook for 2 minute then add cut okra, tomato, salt, jaggery/sugar (optional) & cook for 1 minute.
  8. Add water if the Sambar is thick.
  9. Check salt, spice, sourness & add accordingly.
  10. Last add chopped coriander leaves & remove from heat & temper.
  11. To temper: Heat a pan with 2 tablespoon oil, add mustard seeds. When they splutter add asafoetida, red chillies, curry leaves, garlic. When garlic turns brown add the temper to the Sambar
  12. Serve with Rice, All types of dosa & Medu Vada

Notes

  • You can add brinjal (small eggplant) & potatoes to the Sambar
  • I used store bought Sambar powder (MTR brand)
