For Masala
We were craving some Sorpotel and didn’t have all the ingredients so we tried to recreate it with what we had. In this recipe my husband used Spicy Italian Sausages.
Ingredients
- 4 Large (approx 1 lbs) Spicy Italian sausages
- 1 large finely chopped onion
- 1 tbsp garlic cloves finely chopped
- 1 tbsp ginger finely chopped
- 2 slit green chilies
- 3 tsp brown sugar
- 2 tbsp white Vinegar
- 1 marble sized tamarind pulp
- 4 tbsp cooking oil
- Salt to taste
For Masala
- 5 kashmiri chillies
- 2 bedki chillies
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1/2 tsp mustard
- 30-40 black pepper
- 15-20 cloves
- 1 Inch cinnamon
- 1 cardamom
- 1 tsp turmeric powder
- 1 Inch ginger
- 5-6 Garlic cloves
- 1 medium onion cut into quarters
- 10 tbsp Malt/Red Wine Vinegar to grind masala
Instructions
- Grind all the masala ingredients to a fine paste in a mixer/blender adding sufficient vinegar
- While the masala is grinding, cut the sausages (when semi thawed) into 1/2 inch cubes
- In a pan heat, 4 Tbsp of oil & add 1/2 chopped garlic, 1/2 chopped ginger & 1/2 chopped Onion and fry for 1 min.
- Add the cubed sausages & fry until sides start to brown. Remove from pan & set aside.
- In the same oil, fry the bay leaves, add in the masala and stir fry for 3 mins or until the oil stars to seperate.
- Add the fried sausages & mix well.
- Add 2-3 cups of boiling water (depending on the texture you prefer) & boil curry for 5 mins.
- Add 3 tsp of brown sugar, Tamarind pulp & 1/2 remaining onions, ginger, garlic & slit green chillies.
- Add salt & white vinegar to taste.
- Boil for 1 min & masala sausages are ready to serve.
- Serve with steamed Rice, Paav (bread), Pancakes, Dosas or Sannas/Idlis
