Tuna Croquettes

Serves: 24 small croquettes Prep Time: 15 Minutes Cooking Time: 30 Minutes 30 Minutes

Ingredients

  • 3 cans tuna (170 grams each) - well drained
  • 1 large onion chopped
  • 5 garlic cloves
  • 3-4 green chilies
  • 1 inch ginger
  • 1 cup chopped spinach
  • 1/2 cup grated carrot
  • 1 -2 tsp crushed black pepper powder
  • 1/2 tsp turmeric powder
  • 5 tbsp lemon juice
  • Salt (as required)
  • 2 medium potatoes - boiled, peeled and grated
  • 2 tbsp coriander leaves - chopped
  • 1 egg beaten
  • Panko or breadcrumbs

Instructions

  1. Heat 4 tbsp oil, add crushed garlic, ginger and green chillies fry for 1/2 a minute.
  2. Add chopped onions and fry for 1 minute then add grated carrot and fry for 1 minute.
  3. Add chopped spinach and fry for 1 minute then add tuna and mix nicely.
  4. Add turmeric, crushed pepper, salt and cook stirring until the mixture is dry.
  5. Last add lemon juice then check salt and sourness and add accordingly.
  6. Remove from heat, cool then add boiled grated potatoes and mix well.
  7. Add the chopped coriander, mix well.
  8. Shape into croquettes.
  9. Dip in beaten eggs and then into Panko or breadcrumbs and shallow fry all croquettes.
