My husband loves making breakfast! He’s the master of Omelettes and Egg Bhurjis (scrambled eggs) in our house. This upma recipe is one of his breakfast specials as well.
Ingredients
- 2 cups Rava/Sooji/Semolina
- 1/4 tsp mustard
- 1/4 tsp Jeera
- 1/2 cup carrot chopped into 1/4 inch pieces
- 3/4 cup onion chopped
- 1 tbsp coriander leaves chopped
- 2 green chillies slitted
- 1/2 inch ginger finely chopped
- 10 Curry leaves
- 2 tbsp Ghee
- 1/2 tsp lime juice
- 4 cups boiling water
- 1/2 cup milk
- 4-5 tbsp sugar (Add according to taste)
- Salt as per taste
Instructions
- On low heat, dry roast Rava for 5 mins & set aside.
- Heat a pan & add 2 tbsp ghee. Once ghee has melted, add mustard, jeera, ginger, curry leaves & asafoetida.
- When mustard starts to splutter, add carrots, onions, green chillies, salt to taste & fry for 5 mins on medium flame.
- Add water, milk, sugar, coriander leaves & bring to a boil. Add the Rava very slowly to the boiling water in little quantities & stir continuously.
- Add the lime juice & on medium flame keep stirring until the water has evaporated & the rava is cooked.
- Fluff the lumps & serve.
