Is there anything more delicious than some fresh and crispy medu vadas? They are my husband’s favourite south indian dish. Whenever we go to any south indian restaurant, this is the first thing he orders even before looking at the menu. Pair it with some yummy sambar and chutney and you have a wholesome meal.
Ingredients
- 2 cups Urad Dal (Split black gram without skin)
- 1 large onion chopped fine
- 2-3 green chillies chopped fine
- 1 inch ginger chopped fine
- 1 tsp cumin seeds
- 1 tsp of crushed pepper
- 10-12 curry leaves chopped fine
- 1-2 tbsp rice powder
- salt to taste
- Oil for deep frying
Instructions
- Wash dal 3-4 times, add water and the soak dal overnight. In the morning, drain the water into another container using a strainer and keep the water aside to use for grinding.
- Add dal to the mixer and grind adding little water at a time. Grind to a smooth thick batter (don't add too much water while grinding)
- Remove and add salt, rice powder and beat it for 5 mins in the stand mixer using the paddle attachment on #4, until it is light and fluffy (when you drop a small sample of batter in water it will float). (*See notes)
- Cover and keep aside for 1 hour
- After 1 hour, heat oil on medium heat
- While the oil is heating up, to the batter, add the chopped onion, ginger, green chillies, curry leaves, jeera and fold in gently
- To check if the oil is hot - drop a small piece of batter in oil. If it comes up immediately without browning then you can start frying the vadas
- *Dip your fingers in water, then pinch a small rounded portion of batter onto your fingers, flatten it a little with your thumb and make a hole in the center with your thumb, then flip your hand to carefully drop the vada in the hot oil. (**See notes)
- You can fry multiple vadas at the same time (don't overcrowd oil)
- Fry all the vadas on medium heat until they are golden brown. Remove on paper towel.
Notes
- *Alternately you can beat the batter by hand or whisk in one direction for 5-7 mins or until you get the batter light and fluffy (you can check by dropping a small portion of batter in a bowl of water, if it floats it is done)
- **Another easy method which my husband tried was placing the batter on parchment paper. Take approximately 4x8 inch parchment paper, apply little oil, then dip your fingers in water take a small portion of the batter and place it on the parchment paper. Flatten it a little, then dip your index finger in water and make a hole in the center, then lift the paper and flip it to slide batter into the hot oil. Fry till golden brown then remove on paper towel.
