One of our favourite salads to make is this healthy mixed bean salad. It’s so delicious, fresh, quick to make and our go-to as a side dish especially with BBQ or wild rice. You can include any beans of your choice – our tried and tested favourites are corn, kidney beans, chickpeas and black beans.
Ingredients
- ½ cup canned chickpeas
- ½ cup canned red kidney beans
- ½ cup canned white kidney beans
- ½ cup canned black beans
- ½ cup canned whole kernel corn
- 1 cup coloured peppers (red, yellow and orange)
- 1 cup red onion chopped fine
- ½ cup coriander leaves chopped fine
Bean Salad Dressing
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp balsamic vinegar
- 2 tsp hot sauce
- 1 tsp pepper powder
- ½ tsp kashmiri powder
- 2 tbsp lemon juice
- 2 garlic cloves (pressed/minced)
- 1 tsp salt
- 1 tsp sugar
Instructions
- In a bowl, add all the beans, peppers, onion, coriander leaves and keep aside
- In a small bowl, add all the dressing ingredients & mix nicely
- Add to the bowl of mixed beans
- Adjust the salt, spice & sourness according to your taste
