After moving to our new home, we were pleasantly surprised to find Amaranth leaves growing in our backyard garden. These leaves are rich in nutrition & here’s a quick recipe for preparing them.

Green Amaranth Leaves Stir Fry

Serves: 3-4 Prep Time: 15 Minutes Cooking Time: 10 Minutes 10 Minutes

Ingredients

  • 3 cups Green Amaranth leaves
  • 2 small potatoes
  • 1 medium onion
  • 2 tsp of ginger garlic paste
  • 2-3 tbsp tomato puree
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1-1.5 tsp Kashmiri chilli powder
  • 1/4 tsp garam masala

Instructions

  1. Wash the leaves thoroughly & finely chop
  2. Heat 2 tbsp oil, add cumin seeds; when they splutter, add onions & sauté on medium flame till almost golden
  3. Lower heat & add ginger garlic paste, fry for 30 seconds, add turmeric & chilli powder & fry for another 30 seconds
  4. Add tomato purée, salt & fry till dry & oil seperates then add potatoes & mix
  5. Add 1/2 cup water, cover & cook on low flame till potatoes are almost cooked
  6. Add amaranth leaves, mix & cook on low flame for 2 mins. Add garam masala. Check salt, spice & sourness; adjust according to taste
  7.  Remove & serve with Chapatis, Parathas, Rotis, Naan
