After moving to our new home, we were pleasantly surprised to find Amaranth leaves growing in our backyard garden. These leaves are rich in nutrition & here’s a quick recipe for preparing them.
Ingredients
- 3 cups Green Amaranth leaves
- 2 small potatoes
- 1 medium onion
- 2 tsp of ginger garlic paste
- 2-3 tbsp tomato puree
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1-1.5 tsp Kashmiri chilli powder
- 1/4 tsp garam masala
Instructions
- Wash the leaves thoroughly & finely chop
- Heat 2 tbsp oil, add cumin seeds; when they splutter, add onions & sauté on medium flame till almost golden
- Lower heat & add ginger garlic paste, fry for 30 seconds, add turmeric & chilli powder & fry for another 30 seconds
- Add tomato purée, salt & fry till dry & oil seperates then add potatoes & mix
- Add 1/2 cup water, cover & cook on low flame till potatoes are almost cooked
- Add amaranth leaves, mix & cook on low flame for 2 mins. Add garam masala. Check salt, spice & sourness; adjust according to taste
- Remove & serve with Chapatis, Parathas, Rotis, Naan
