This lemon and garlic broccoli stir fry is another healthy, colourful and tasty dish prepared by my husband. We wanted to share this fresh and delicious recipe with you all so that you can try it too.
Ingredients
- 250 gms broccoli
- 1 tsp ginger-garlic paste
- 4 garlic cloves finely chopped
- 1/2 tsp cumin seeds
- 1/2 lemon with rind (cut into 8 pieces)
- 8 cherry tomatoes cut into half or 1/2 tomato (cut into 8 pieces)
- 1/8 tsp or 2 pinches of asafoetida
- 1 tbsp coconut oil
- 1/4 cup hot water
- salt to taste
Instructions
- Cut the broccoli florets with 1 inch stem vertically into 4-6 slices depending on the thickness. Then in a bowl, add the broccoli, cold water, 1 tsp salt, mix and leave for 10 mins. After that drain the water and wash the broccoli once more with clean water and drain in the strainer and keep aside.
- Heat oil in a pan on medium to low flame. Add cumin, once it starts to splutter, add the asafoetida, half of the cut garlic and fry for 30 seconds (take care not to burn)
- Add ginger-garlic paste and fry for 30 seconds. Add Broccoli, squeeze 2 pieces of lemon and put the rind in the pan (to retain the broccoli color) and sauté for 1 min. Then add hot water and salt mix, cover and cook for 2 mins until Broccoli is 3/4th done (do not overcook) and the water is reduced to 1 tbsp.
- Then add the remaining cut garlic, tomatoes and remaining lemon pieces, mix and cook until the water is dry. Remove and serve
