Growing up, our kids loved the malabar chicken masala we used to get at the local restaurant. Paired with parathas this was a delicious combination. Our kids are now grown up and those local restaurants are many many many miles away in another continent. This was Ron’s attempt at replicating it in the TastySpicyDelish kitchen and it brought back so many fond memories.
Ingredients
Marination
- 500 grams boneless chicken thighs
- 50 grams onions chopped fine
- 1/2 tsp turmeric powder
- 1 tsp salt
Masala
- 100 grams onions chopped fine
- 1/4 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp red chili powder
- 1/4 tsp kashmiri chili powder
- 1/4 tsp pepper powder
- 1/4 tsp garam masala powder
- 100 grams green capsicum (cut into 3/4 inch cubes)
- 1 medium tomato (cut into 3/4 inch cubes)
- 3 tbsp oil
Instructions
- Cut chicken into 1 1/2 inch cubes. Wash nicely twice, drain and keep aside
- Marinate the chicken with onions, turmeric and salt for 20 minutes
- In a pan, heat oil, add onions and fry until translucent on medium flame
- Add chicken and stir fry for 5 mins until it starts to release its juices
- Add turmeric, cumin powder, coriander powder, chilly powders and stir fry for another 5 mins
- Close the lid and let it cook for 5 mins, stir occasionally and ensure the masala does not burn
- Add capsicum cubes, tomato cubes and salt if required. Cover and cook for another 2 mins
- Remove from flame and serve with paratha or chapati
