It’s mango season and it’s also been extremely warm here these past couple of days. What better way to celebrate these two things with a delicious mango falooda. My family loves the traditional falooda with the Rooh Afza flavour. I decided to try a different spin on falooda and go with a mango flavour. It turned out to be so tasty with the ice-cream that I think this is my family’s new favourite style of falooda. I hope you enjoy it too!

Serves: 2-3 Prep Time: 30 Minutes Cooking Time: 30 Minutes 30 Minutes

Ingredients

  • 3 medium mangoes
  • 4 cups milk (full fat milk)
  • 2 tbsp maple syrup / honey
  • 1 cup store-bought falooda sev (thin corn starch vermicelli)
  • 1 tbsp sabja seeds (sweet basil seeds/tukmaria)
  • vanilla ice-cream for garnish
  • dried nuts for garnish (optional)
  • jelly / jello (optional)

Instructions

  1. Milk - Boil 4 cups milk and reduce to half stirring occasionally on medium flame. Remove from heat, cool and keep it in the fridge to chill
  2. Falooda Sev - In a pot, add water and bring to a boil. Cut store-bought falooda sev into 2-3 inch pieces and add to the boiling water. Boil for 2 mins/aldante or as per the packet instructions. Remove from heat, drain onto a strainer, then add to a bowl of ice cold water. Keep the bowl in the fridge to chill.
  3. Sabja Seeds - Clean and soak sabja seeds in 1 cup water for 20 - 30 minutes, when it swells, drain the extra water using a tea strainer or any fine strainer, cover and keep it in the fridge to chill.
  4. Mangoes - Peel and cut 2 mangoes into large chunks and keep in the fridge to chill. Peel and cut 1 mango into small pieces for garnish and keep in fridge to chill.
  5. Once all the milk, sev, sabja and mangoes are chilled, then in a blender add the mango chunks and puree it. Then add the milk, maple syrup and blend it for 1 minute and keep aside.

Assembling your falooda
In a tall glass or mason jar add:

  1. Sabja seeds
  2. Falooda Sev (drain the water and add only the sev)
  3. Mango milk puree
  4. Ice-cream scoop
  5. Garnish with cut mangoes

Notes

  • You can prep the following items one day before and keep in the fridge to chill.
    • Boil the milk
    • Boil the Falooda Sev
    • Soak the Sabja seeds
  • As per your preference, you can layer the falooda and adjust the quantity accordingly
