My husband prepared this healthy and delicious radish and carrot dish with a mangalorean twist. He added grated coconut and Mangalorean sambara-pito. He loves cooking and creates different dishes with twists and turns. They always turn out delicious and yummy.
Ingredients
- 250 gms Radish with leaves
- 100 gms Carrot
- 1 Large Onion
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1/4 tsp Asafoetida
- 2 tbsp homemade Mangalorean sambar pito
- 3 tbsp fresh/frozen grated coconut
- 2 tbsp thick cream
- 3 tbsp coconut oil
- salt to taste
- 1/2 cup hot water
Instructions
- Peel radish and carrot, wash and cut into small 1/4 x 1/4 inch pieces (as seen in the pic)
- Wash the radish leaves and chop roughly
- Heat oil in a pan on medium flame, add mustard. When mustard starts to splutter add cumin and asafoetida, then add onions and fry stirring until translucent
- Add carrots, salt and fry for 4 mins until half cooked
- Add grated coconut and fry for 1 minute on low flame
- Add radish and leaves, fry for 2 mins then add 1/2 cup hot water, mix and cover. Cook for 2 mins on medium flame
- Add Sambara-Pito then cover and cook for 1 min on low flame
- Add cream, check salt and cook for 1 min then remove from flame
- Serve with parathas, chapatis, neer dosas and dosas.
